No-Cook Tomato Sauce with Tortellini
(A great picnic salad or side-dish)
- "2 9-oz. refrigerator packages meat-or-cheese-stuffed tortellini (or 1 16 oz. pkge.
of any pasta. ie. shells, elbows, twists.)*"
- "1 lb. fresh, ripe tomatoes"
- basil (to taste)
- parsley (to taste)
- garlic powder (to taste)
- 3 T olive oil
- 1 T balsamic vinegar or red wine vinegar
- 1/2 t salt
- 1/2 t black pepper
"In deep 4-qt. saucepan over high heat, bring 2 quarts water to boil; add tortellini;
cook 8 minutes, stirring occasionally until tender. Meanwhile, cut tomatoes into
1/4"" dice; place in large bowl. Add herbs and garlic to bowl with tomatoes. Gently
stir in oil, vinegar, salt and pepper to mix well. Drain tortellini very well and
place in large bowl; toss with tomato mixture to coat thoroughly. "
