Italian Potatoe Balls
- "1 1/2 lb. potatoes, peeled. (3-4)"
- 2 egg yolks
- 1/2 c Parmesan cheese
- "2 T onion, finely chopped"
- 2 T vegetable oil
- 2 T parsley
- 1 t salt
- 1/2 pepper
- "2 eggs, beaten"
- Bread crumbs
"Boil potatoes in salted water until done. Mash and combine with egg yolks and cheese
in large bowl. Saute onion in oil. Add to potato mixute along with parsley, salt
and pepper. Stir until smooth. Shape into bite-size balls. Roll in flour, then in
beaten eggs, then coat with bread crumbs. Chill until ready tofry. Fry in deep fryer
(375 degrees) until golden brown. Serve as side dish or appetizer. Marinara sauce
may be served on the side for dipping."
